Sausage & Potato Soup
1 package TMRW Foods Gourmet Original Bratwurst
3 Tbsp Olive Oil, divided
1 medium yellow onion, diced
2 celery sticks, chopped
2 carrots, chopped
4–5 medium gold potatoes, peeled and diced
1 tbsp garlic, minced
2 tsp fresh rosemary, minced
2 tsp fresh oregano, minced
2 tsp fresh thyme
3 + ½ cups vegetable broth
1 cup Corn
½ – 1 tsp Salt (adjust to taste)
1/8 tsp pepper
4 tsp Cornstarch + 3 tbsp water, stirred
1 cup Sour Cream
Heat half of the olive oil in a large pot over medium heat. Add the sausage to the pot and cook for 8-10 minutes, until cooked. Transfer to a bowl and set aside.
Add the remaining olive oil, onions, celery, and carrots to the pot. Cook over medium heat, until the onions are starting to become translucent, then add garlic and cook for one more minute.
Add the potatoes, and fresh herbs. Cook for 3 minutes, then add in the broth and corn. Bring to a simmer, cover and cook for 25-30 minutes, until potatoes are fork tender.
Once the potatoes are tender, uncover and turn the heat to low. Add in the cornstarch mixture and stir well, then add in sour cream and stir well again. Add the salt and pepper and adjust to taste.
Add the sausage back to the pot and stir to combine. Remove from heat and serve topped with your add-ons of choice!
