Vegan Mac and Cheese Waffle Slider
2 tablespoons apple cider vinegar
1 teaspoon cane sugar or maple sugar
½ teaspoon celery seed powder
½ cup julienned red peppers
¼ cup chopped cilantro
½ Vegan Mayo
3 cups chopped red cabbage
1 cup julienned carrots
Salt & pepper to taste
1½ cups vegan pulled pork
1 tablespoon olive oil
- For the Vegan ColeSlaw: Remove any tattered or bruised outer leaves on your cabbage. Cut the cabbage into quarters, and then cut out the core. Chop into thin slices. Do the same for the carrot and red peppers. In a medium to large bowl, whisk apple cider vinegar, vegan mayo, sugar, and celery seed powder. Add the red pepper, cabbage, cilantro, and carrots. Add salt and pepper to taste if desired. Mix well.
- For the Waffle: Make the vegan mac and cheese according to package instructions. Pour into a bowl and mix with flour (GF if needed), onion powder, minced parsley, minced chives, and shredded vegan cheddar cheese. Grease the waffle iron well and add enough batter to cover the entire waffle iron. Cook for six to seven minutes. Once cooked, carefully remove from hot iron.
- For the Vegan Pulled Pork: Heat a pan to medium heat. Add olive oil. Cook Vegan Pulled Pork according to package instructions.
- To build: Place one waffle square down followed by the Vegan Pulled Pork. Top with coleslaw followed by another waffle square.
